Peanut Butter Cupcakes with Strawberry Icing


I discovered this wonderful combination yesterday and am glad (angry) that I did! So surprisingly wonderful. I love peanut butter in baked goods, so I like to make these cupcakes. The icing was a last minute decision, and I'm glad I tried it.

I got the cupcake recipe from here. The recipe said the batter yields 12, but I got 15.

I also got the icing recipe online but changed it a bit and this is what I came up with:

1/4 cup melted butter
1/2 tsp vanilla
pinch of salt
1-2 cups powdered sugar
1/2 cup chopped strawberries

First I cut up the strawberries and put them in my mini food processor to get them more finely chopped. Then I melted the butter, and combined with vanilla and salt. I added 1 cup of powdered sugar and the chopped strawberries. I kept adding more powdered sugar until I got the desired consistency.

The icing recipe yielded A LOT (definitely more than for just 15 cupcakes). I saved it and plan on either making more cupcakes later this week, or drizzling some on cookies!
