Dairy Free Chocolate Cake


I modified a dairy free chocolate cake recipe today to make it a 2 point weight watchers friendly cake. It is pretty good. Definitely satisfies a chocolate craving without sacrificing many points and is made from ingredients I always have on hand.

Preheat oven to 375 F. Spray an 8x8 baking pan with cooking spray.

Whisk together in a large bowl:
1 1/2 cups all purpose flour
1 cup sugar
1/3 cup unsweetened cocoa powder
1 tsp baking soda
1/2 tsp salt

Then add:
1 cup cold water
1/4 cup unsweetened applesauce
1 Tbsp distilled white vinegar
2 tsp vanilla

Whisk until smooth and add to the pan. Bake for 25-30 minutes until inserted toothpick comes out clean. Once cooled, sprinkle with powdered sugar.

Cooking Update

Well, I haven't been trying anything new lately. We're getting ready to leave in 5 days so we're trying to use up perishables and frozen foods before we leave. We had a dinner guest the other night, one of Dave's coworkers, so I made some excellent turkey burgers, roasted asparagus, and french fries (frozen... didn't have time to make my own). For dessert I made strawberry pie again. This one looked MUCH better than the first.

I'm starting to get REALLY jealous of anyone with a grill. I love bbq and grilled meats/poultry/veggies in the summer. Lack of money, Dave's disinterest, and my lack of time to use a grill with 2 small children and no one to help supervise has prevented us from going out and buying one. Hopefully next summer we can invest in a small grill and be like our neighbors and friends. I sure do like grilled hot dogs!!! I really feel like we're missing out this summer. Hopefully my mom will grill at least one night while we are visiting so I can get my grilled food fix.

Milk Bread


This is our favorite bread so far. Between Dave, Jordan, and I, the first loaf was gone within 24 hours. Thankfully I froze the 2nd loaf! I can never make just one loaf at a time. I have added flax seed to make it slightly more healthy, probably could add some other things too. I love how soft and fluffy it is. The bread almost melts in your mouth, it is THAT good!! I haven't tried it with whole wheat flour yet, just bread flour. I wonder if it would still be as fluffy? Will try next time!

This Is Clean...


Seriously... the floor is vacuumed, there are no "dangerous" items on the floor. This is what my living room looks like on a typical day. All you people without children, please don't judge. Once you have kids, their toys take over your house. You try to keep it manageable with your first child; sanitize toys at night, put them in proper, labeled containers. Once you have your second child, you could give a sh!t about how clean toys are, where they are put at the end of the night, or if there is a cheerio on the floor. As long as my cell phone is safe, computer is put away, and there are no items on the floor that cats or infants can choke on, I'm pretty happy with the state of my living room. I keep telling myself once we've outgrown infant toys it will be cleaner and more organized, but I know that's just not true.

I think I need a new toy box... or two!

6 Months Old!



On July 5th Benjamin turned 6 months old. He weighed in at 19lb 9 oz and 26.5 inches long at his doctor's appointment on Monday. Hefty boy indeed!!

Whole Wheat Bagels

I got totally impatient and didn't let the dough rise long enough, but they were oh so good!


Here is the recipe I used:

Whole Wheat Bagels
Makes 8

1 cup and 2 Tbsp warm water
1 Package active dry yeast
2 1/2 tsp sugar

Combine in the bowl of a mixer until yeast dissolves.

Stir in:
1 Tbsp melted butter
1 1/2 tsp sugar
1 3/4 tsp salt
1 cup whole wheat flour (could use bread flour for white bagels)

Gradually stir in 2-3 cups bread flour.

Knead by hand or with dough hook until dough is smooth and elastic. Let rise, covered, for 20 minutes. Punch dough down and divide into 8 pieces. Roll and form into bagel shape. Let rise, covered, for 15 minutes, until puffy.
Preheat oven to 425 F.
Boil:
4 quarts water
1 Tbsp sugar
1/2 tsp salt

Drop 4 rings at a time into the boiling water . Turn bagel over after it surfaces for an additional minute. Place on an ungreased baking sheet coated with cornmeal. Bake for 20-25 minutes, turning after 15 minutes.

You can obviously change the recipe to what you like, cinnamon raisin, onion, garlic, sesame seed. I can't wait to try something new!

Cooking

I went to see My Sister's Keeper the other night. Yes, a movie! Yes, without children!!! Anyway, I am getting sidetracked. There was a preview for the movie Julie & Julia. I had never heard of this. Julie decided to try all the recipes in a Julia Child cookbook in 365 days. Needless to say I am quite intrigued.

I don't have any hobbies right now. Who can with a toddler and a demanding infant? I spend way too much time online, especially on Facebook (oh, and I will NOT be twittering... way too much for me I think!!). I need a real hobby. Lately I have been cooking a lot of bread recipes out of my Joy of Cooking cook book. My breads are turning out quite nicely, especially the milk bread and cheese bread. Last night I made homemade pizza dough and my pepperoni pizza was GREAT. I will never do takeout again!

So I'm wondering, if Julie can learn to cook like Julia Child, maybe I could do something similar? Obviously I won't be turning it into a book like she did, but just to expand our tastebud horizons. We eat so many of the same things over and over again. I hardly ever cook vegetables because I don't know how. Maybe now is the time to learn? Maybe seeing me cook will get my children interested in cooking and *gasp* expand what Jordan eats (I cannot imagine how toddlers can think it is ok to eat chicken nuggets EVERY DAY).

I'll keep you all posted and will take pictures. I already have pizza pictures!!
